Chocolate Coca-Cola Cake

A moist chocolate sheet cake made with a cake mix and Coca-Cola. Can't get much easier than that. Add on the delicious, pourable frosting and you have a hit!

Equipment

  • 9 x 13 inch cake pan

Ingredients
  

  • 1 box Chocolate Fudge Cake Mix ( 15.25 oz – can also use Devil's Food mix)
  • 1 small box Instant Chocolate Pudding mix (4 oz.)
  • 2 – 3 Eggs (as directed on cake mix box)
  • ⅓ to ½ cup vegetable oil (as directed on cake mix box)
  • 1 ⅓ cups Coca-Cola
  • Non-Stick Cooking Spray

Instructions
 

  • Preheat oven to 350 degrees Farenheit. Spray 9 x 13 baking pan with nonstick cooking spray. 
  • Pour dry cake mix into large mixing bowl. Add in instant pudding powder and mix.
  • Prepare cake mix according to package directions but instead of adding water, use the same amount of Coca-Cola instead. 
  • Beat with mixer on slow speed until all ingredients blended (less than a minute) and then continue to beat on medium speed for a few more minutes until batter is nice and thick.
  • Pour the batter into baking dish making sure to spread evenly.
  • Bake according to package directions (usually 35 – 39 minutes) or until cake surface springs back when touched.
  • Just before cake is ready to come out of the oven, start making frosting.

Pourable Chocolate Frosting

This pourable chocolate frosting is perfect for icing a cool or warm sheet cake. It can also be used as a drip frosting over a round layer cake.

Ingredients
  

  • 1 stick unsalted butter (¼ lb)
  • 2 tbsp unsweetened cocoa (use good quality for best flavor)
  • 4 – 6 tbsp heavy cream (35% whipping cream)
  • 2 cups powdered icing sugar (packed)
  • 1 tsp vanilla extract
  • ½ cup chopped pecans or walnuts (optional)

Instructions
 

  • In a medium saucepan, over medium heat, start melting one stick of butter/margarine. 
  • Add in cocoa powder and heavy cream and stir. 
  • Once that is thoroughly mixed, then stir in confectioner’s sugar. At this point I’ll grab a whisk and stir briskly to get all the lumps out. 
  • Take mixture off heat and add in vanilla extract. 
  • Once cake comes out of oven, let sit for 5 to 10 minutes to start cooling.
  • Pour frosting over warm cake. Do your best to spread it out evenly.
