Cool-Whip Buttercream Frosting

Ingredients:

  • 1 cup unsalted butter, softened to room temperature
  • 3 to 4 cups powdered sugar
  • 1 tsp vanilla
  • 1 tub of cool whip, defrosted (keep in fridge until ready to use)

Directions:

  1. In a large mixing bowl using an electric mixer, beat the butter on medium speed until smooth.
  2. Add in 3 cups of the powdered sugar, 1 cup at a time, and mix on low speed at first, then increase to medium speed (after each cup). Continue mixing for another 1-2 minutes until the mixture starts to come together. (reserve 4th cup of icing sugar – see #5)
  3. Add in the vanilla extract and mix until combined.
  4. Fold in the Cool-Whip and mix on low speed until thoroughly combined.
  5. If the frosting is too thin, you can add a bit of the reserved icing sugar until desired consistency is reached.
  6. Keep frosting in fridge until ready to use. You may have to let it sit for a few minutes to soften up when ready to frost cake/cupcakes.
