Instant Pot Strawberry Iced Tea

Ingredients:

  • 10 cups (2.3 Liters) water, divided 3 cups + 7 cups
  • ¼ teaspoon baking soda
  • 6 Iced Tea bags, family-sized
  • ⅓ cup (170 grams) organic honey, or sweetener of your choice + to taste
  • 16 ounces (454 grams) red ripe strawberries, washed, hulled & quartered
  • 1 Tablespoon sugar, to macerate strawberries
  • 1 lemon, zested + juiced
  • 1 lime, zested + juiced

Directions:

  1. Add 3 cups water, baking soda and 6 tea bags to the Instant Pot insert, place the cover and lock into position. Set the vent to Sealing, then select Manual & High Pressure and set the timer to 5 minutes.
  2. While the Tea brews in the Instant Pot, wash and hull the strawberries then quarter and toss into the food processor with 1 tablespoon of sugar. Zest the lemon and lime then squeeze the juice from both into the processor.
  3. Blitz for a minute and set aside.
  4. Allow the IP to do a Natural Release for 5 minutes, then do Quick Release to depressurize fully. Remove the tea bags and then add honey or sweetener if using.
  5. Once you’ve added the sweetener (if using) add the remaining 7 cups water and allow the tea to chill completely before adding the strawberry puree.
  6. Stir in the strawberry puree. Fill glasses with ice and pour to the top, garnish with strawberries, lemon wheels, sliced oranges or fruit and herbs of your choice.

Note: Baking soda makes a big difference in a pitcher of freshly brewed sweet tea. It neutralizes the tannins in tea and gives a balanced taste.
