Apple Muffins


Ingredients:

Muffins:

  • 2 cups white sugar
  • 2 eggs
  • 1 cup canola or vegetable oil
  • 1 tablespoon vanilla
  • 3 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 heaping cups peeled, cored and diced apples **

Topping:

  • 1/2 cup brown sugar

Tip: I don’t prepare the apples until the wet and dry ingredients are ready to be combined.

Directions:

  • Preheat oven to 350 degrees Celsius.
  • Line a muffin tin with paper liners or spray with non-stick cooking spray.
  • In a large bowl, whisk together the sugar, eggs, oil and vanilla.
  • In a separate large bowl, sift or whisk together the flour, baking soda, salt and cinnamon.
  • Add the dry ingredients gradually into the wet and mix until combined.
  • The batter will be very thick at this point. Gently fold the diced apples in with a wooden spoon.
  • Using a teaspoon, drop dough into the muffin liners, filling each one approximately 3/4 full.
  • Sprinkle the tops with the brown sugar.
  • Bake for 20 to 24 minutes, until tops are golden brown.

These are also good baked in mini loaf pans following same directions as above.
