Christmas Mice (Almond Cookies)

Ingredients:

  • 1/2 cup butter or margarine
  • 1/2 cup lard
  • 3 rounded Tbsp of icing sugar
  • 2 cups flour
  • 1 cup ground almonds

Directions:

  1. Cream together butter and lard.
  2. Add icing sugar, flour and ground almonds.
  3. Shape into the size of a mouse and place on parchment or silicone covered baking sheet.
  4. Bake for about 15 minutes.
  5. Let cool to touch, but warm enough still to roll in sugar.
  6. You can also dip one end in melted chocolate if preferred.
  7. Store in airtight container. They can also be frozen.
