Roasted Cauliflower and Carrots

Ingredients:

  • 1/2 head of cauliflower, chopped and trimmed
  • 2 to 3 large carrots, peeled and thinly sliced
  • 3 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/3 teaspoon pepper
  • Extra salt and pepper (to season after roasting)

Directions:

  1. Preheat oven to 450F and line 1 large or 2 medium baking sheets with aluminum foil.
  2. Toss the cauliflower and carrot in a large bowl with the olive oil, thyme, paprika salt and pepper until well coated.
  3. Spread in a single layer on the lined, rimmed baking sheet(s).
  4. Roast until tender and browned, approximately 20 to 25 minutes, stirring once or twice during cooking time.
  5. Remove from oven and season with more salt & pepper if necessary.
