Banana Loaf

Use up those overripe bananas. Try out this moist and delicious, easy to make, banana loaf recipe.

Ingredients
  

  • 3 lg bananas , well mashed
  • 1 cup white sugar
  • 2 eggs , beaten
  • ½ cup vegetable oil
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt

Instructions
 

  • Preheat oven to 350 degrees.
  • To the mashed bananas, add the following ingredients one at a time, mixing well with each ingredient added: sugar, eggs, oil.
  • Combine the two kinds of flour, the baking soda and the salt and then add to the banana mixture. Stir until combined. 
  • Pour into well greased 5×9 loaf pan and bake for 55 to 60 minutes. Top should be lightly browned and spring back to the touch.
  • Remove from oven and let cool in pan on wire cooling rack for 10 minutes.
  • After 10 minutes, remove loaf from pan and set on wire cooling rack until completely cooled.
