Tomato Cucumber Avocado Salad
A tasty cold salad is the perfect side dish in the summer. This is full of great veggies, feta cheese and some avocado. Bring it all together with a tangy home-made dressing and I promise, you will do absolutely no cooking.
Ingredients
- 1 ½ cups Cherry or grape tomatoes chopped
- 1 English cucumber peeled, seeded and diced
- 1 Avocado diced
- 4 oz Feta cheese cubed
- 2 tbsp red onion minced
- 2 tbsp olive oil
- 1 handful fresh parsley minced (about 2 tbsp)
- 1 tbsp red wine vinegar
- 6 to 8 twists black pepper from pepper mill
Instructions
- Cut cherry/grape tomatoes in half and add to a mixing bowl.
- Peel and seed the cucumber and dice it. Add to the mixing bowl.
- Add the diced avocado, minced red onion, feta cheese and minced parsley to the bowl.
- In a separate small mixing bowl, whisk together the olive oil, read wine vinegar and the black pepper. Pour this over the salad and toss very gently to combine.
- Serve immediately.
Notes
If you are not serving right away, save the avocado until minutes you are ready, then dice and add.
