Ingredients:
- 1/2 head of cauliflower, chopped and trimmed
- 2 to 3 large carrots, peeled and thinly sliced
- 3 tablespoons olive oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/3 teaspoon pepper
- Extra salt and pepper (to season after roasting)
Directions:
- Preheat oven to 450F and line 1 large or 2 medium baking sheets with aluminum foil.
- Toss the cauliflower and carrot in a large bowl with the olive oil, thyme, paprika salt and pepper until well coated.
- Spread in a single layer on the lined, rimmed baking sheet(s).
- Roast until tender and browned, approximately 20 to 25 minutes, stirring once or twice during cooking time.
- Remove from oven and season with more salt & pepper if necessary.
