Chicken & Rice Soup

Ingredients:

  • 6 cups chicken broth
  • 2 skinless, boneless chicken breasts, cooked and shredded
  • 1 cup diced celery
  • 1 cup diced onion
  • 1/4 cup diced carrots
  • 1/4 cup corn kernels
  • 1/4 cup drained and rinsed black beans (canned)
  • 3/4 cup rice, cooked and rinsed (can use white or brown)
  • Salt & Pepper to taste

Directions:

  1. Bring chicken broth to a boil in a large pot.
  2. Add carrots, onion & celery.
  3. Cook until carrots are tender.
  4. Add shredded cooked chicken, corn and black beans and simmer until they are heated.
  5. Add cooked rice to the pot and simmer another few minutes to make sure all is heated through.
  6. Serve and enjoy.
