Ingredients
- ½ an English seedless cucumber, peeled & thinly sliced (approx 30 slices)
- 1 tub (250 gr) spreadable cream cheese
- 2 tsp chopped fresh chives or dill
- Juice from ¼ lemon
- 18 slices of bread, can use white or whole wheat
Directions:
- In a small bowl, combine softened cream cheese and the chives or dill. Add lemon juice.
- Spread mixture on one side of each slice of bread, and then lay the cucumber slices on top of eight of the slices. Top with the remaining bread, cream cheese side inward.
- Cut off crusts and quarter to make triangles.
- Arrange on platter or serving dish and garnish with parsley.
Can be made up to 3 hours ahead and refrigerated.
