Down East Donairs
Ingredients
Donair Meat
- 1 lb lean ground beef
- 1 tsp salt
- 1 tsp flour
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp italian seasoning
- 1/2 tsp white pepper
- 1/4 tsp cayenne pepper
- optional chopped tomatoes
Donair Sauce
- 1 can evaporated milk
- 1 can sweetened condensed milk
- 2 tbsp garlic powder
- 1 tsp onion powder
- 4 tbsp white vinegar
Instructions
Donair Meat
- Heat oven to 350 C.
- Place ground beef in a large bowl and set aside.
- Combine all spices and grind with with morter & pestle if necessary.
- Add spice mix to the meat, a little at a time, working it through well with hands as you add.
- Once the spices are thoroughly mixed into the meat, make meat into a ball and throw it down onto the counter or a cutting board with some force. Do this 20 to 30 times, kneading after each throw. This will create the tight consistency of the meat.
- Form the meat into a loaf patting it down like you would a hamburger, but making it into a flat, oval loaf shape. Place the loaf on a broiler pan (if you don’t have one a tinfoil lined cookie sheet will do).
- Bake for 1-1/4 hrs (turning over half way through). Let the meat cool down somewhat before slicing into strips.
- .Optional – Fry meat slices if you want crispy meat.
Donair Sauce
- Combine both milks with onion powder and garlic in a medium glass or metal bowl (not plastic, as for some reason it doesn’t set up right in one) and stir together.
- Slowly add vinegar and stir lightly with a fork just until mixture thickens. Stir it too much and it will become runny.
- Refrigerate until ready to use.
To Serve
- Warm a frying pan over medium heat. Lightly wet each pita and cook it in the pan, turning until warm and softened.(or microwave for 12 to 20 seconds) Lightly coat a pita on one side with donair sauce. Place some of the meat on the pita and pour more sauce over it. Add chopped onion & tomato before folding and serve.
