- 1 3/4 cups flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup sugar
- 2 lg eggs
- 1/2 cup canola oil
- 3/4 cup milk
- 1 tsp vanilla
- 1 1/2 cup blueberries
Topping Ingredients:
- 1/4 cup flour
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 3 TBSP melted butter
Directions:
Topping Directions:
- Combine flour, brown sugar and nutmeg.
- Stir in melted butter and mix until combined.
Muffin Directions:
- Preheat oven to 375 degrees.
- Whisk flour with baking powder and salt in medium bowl.
- In a large bowl, combine sugar, eggs, oil and mix until well blended.
- Beat in milk and vanilla.
- Add flour mixture to egg mixture and whisk until batter is smooth.
- Gently fold in berries.
- Fill cups 3/4 full.
- Spoon on crumb topping (see above for topping directions) and bake for 30 minutes or until golden and tooth pick comes out dry.
