Apple Pecan Loaf
A moist, flavorful loaf made with shredded apples and topped with a pecan streusel.

Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tsp apple pie spice (can use cinnamon)
- ⅓ cup vegetable or canola oil
- 1 cup light brown sugar , packed
- ½ cup unsweetened apple sauce
- 2 lg eggs
- 2 tsp vanilla extract
- 2 cups peeled, grated apple (approximately 3 small apples)
Instructions
- Prepare Pecan Streusel Topping and set aside.
- Preheat the oven to 350 F. Grease a loaf pan with shortening and coat with flour.
- In a medium bowl, mix flour, baking powder, salt and apple pie spice. Set aside.
- In a large bowl, whisk together the oil, brown sugar, applesauce, eggs and vanilla until well combined.
- Add the flour to the wet ingredients and stir with a wooden spoon or rubber spatula until the flour is almost completely mixed in.
- Stir in the grated apples until fully combined, but do not over-mix!
- Pour the batter into the prepared loaf pan and sprinkle the streusel topping over it.
- Bake for 50 minutes or until a toothpick inserted in middle comes out clean.
- Set the pan on a wire rack for 15 minutes before carefully removing the loaf from it. Then let the loaf cool completely on a wire rack before trying to slice. (If you try to slice while still warm, it will fall apart.)
Notes
- I use sweet apples like Red Delicious, but it is also good with tart apples.
- The apple pie spice that I use is from Epicure.com, but you can also use just cinnamon.
Pecan Streusel Topping
Ingredients
- ¼ cup light brown sugar , packed
- ¼ tsp apple pie spice (or cinnamon)
- ¼ cup flour
- ⅓ cup pecan pieces , finely chopped
- 1 pinch salt
- 3 tbsp unsalted butter , melted and cooled to room temperature
Instructions
- Combine the brown sugar, apple pie spice, flour, pecans and salt.
- Add the melted butter and stir until combined.
- Set aside until needed.
