Ingredients:
Muffins:
- 2 cups white sugar
- 2 eggs
- 1 cup canola or vegetable oil
- 1 tablespoon vanilla
- 3 cups all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 3 heaping cups peeled, cored and diced apples **
Topping:
- 1/2 cup brown sugar
Tip: I don’t prepare the apples until the wet and dry ingredients are ready to be combined.
Directions:
- Preheat oven to 350 degrees Celsius.
- Line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a large bowl, whisk together the sugar, eggs, oil and vanilla.
- In a separate large bowl, sift or whisk together the flour, baking soda, salt and cinnamon.
- Add the dry ingredients gradually into the wet and mix until combined.
- The batter will be very thick at this point. Gently fold the diced apples in with a wooden spoon.
- Using a teaspoon, drop dough into the muffin liners, filling each one approximately 3/4 full.
- Sprinkle the tops with the brown sugar.
- Bake for 20 to 24 minutes, until tops are golden brown.
These are also good baked in mini loaf pans following same directions as above.
