Heat oven to 350 C.
Place ground beef in a large bowl and set aside.
Combine all spices and grind with with morter & pestle if necessary.
Add spice mix to the meat, a little at a time, working it through well with hands as you add.
Once the spices are thoroughly mixed into the meat, make meat into a ball and throw it down onto the counter or a cutting board with some force. Do this 20 to 30 times, kneading after each throw. This will create the tight consistency of the meat.
Form the meat into a loaf patting it down like you would a hamburger, but making it into a flat, oval loaf shape. Place the loaf on a broiler pan (if you don’t have one a tinfoil lined cookie sheet will do).
Bake for 1-1/4 hrs (turning over half way through). Let the meat cool down somewhat before slicing into strips.
