Prepare Pecan Streusel Topping and set aside.
Preheat the oven to 350 F. Grease a loaf pan with shortening and coat with flour.
In a medium bowl, mix flour, baking powder, salt and apple pie spice. Set aside.
In a large bowl, whisk together the oil, brown sugar, applesauce, eggs and vanilla until well combined.
Add the flour to the wet ingredients and stir with a wooden spoon or rubber spatula until the flour is almost completely mixed in.
Stir in the grated apples until fully combined, but do not over-mix!
Pour the batter into the prepared loaf pan and sprinkle the streusel topping over it.
Bake for 50 minutes or until a toothpick inserted in middle comes out clean.
Set the pan on a wire rack for 15 minutes before carefully removing the loaf from it. Then let the loaf cool completely on a wire rack before trying to slice. (If you try to slice while still warm, it will fall apart.)
